Yirgacheffe Sunrise

Gedeb sits at the top of the Yirgacheffe valley, where the air is cool and the cherries ripen slowly. The Worka cooperative hand-sorts every lot twice before it reaches the washing station. We roast it barely past first crack to keep its tea-like body and the bergamot that makes it sing in a V60.
